Home Cookin'

Sunday: Hubby and I were both EXHAUSTED from our very fun, but late night at the Lacy's, yet we still got up and did our normal Sunday bowling and such with the fam. As a result, we both ended up napping most of the afternoon... aaah! When I finally got up around 6:30, I decided just to reheat the pot roast and vegetables from Friday night. As with most things, it was even better after a day or two in the fridge! :D


Monday: We baked green onion teriyaki pork chops and had broccoli, rice, and a salad to go along with it. We also put a chile rub on the other 2 chops in the package and baked them off to use in a dish later in the week. I am not a big fan of leftovers, so it's important for me to find ways to incorporate "leftovers" that make it into a totally different dish. This is such a simple concept, but it makes a huge difference for me!


Tuesday: Hubby was in San Antonio for business, so I just pulled out some leftover italian food from dinner with his family on Saturday. Not the healthiest of meals, but at least I didn't waste the leftovers! It was a pretty small portion, too... all things in moderation. :)


Wednesday: I had a dinner planned, but Hubby's parents bought something for Dex, so they invited us over for dinner. Carol (my mother-in-law) is allergic to corn and just about anything that is processed, so I can always feel confident that everything she cooks is natural and healthy. We had baked ziti chock full of yummy veggies, salad, and whole grain bread with olive oil and cracked pepper. It was sooooo good, and even better since I didn't have to dirty my kitchen!


Thursday: This is a REALLY busy evening for me! We have to go by Super H and get all my produce for tomorrow evening's Girl's Night, finish cleaning up the house, and somehow get dinner done as well, so I definitely needed something easy to cook! Yesterday I pulled the last portion of homemade chili out of the freezer. I have always frozen leftovers with the intention of pulling it out and using it again, but when I freeze it all in one container, I am less apt to use it. You have to dethaw the entire thing for a couple of portions. Lately, we have been freezing leftovers into individual containers with both single and double portions, and it is working out so well. I actually USE the leftovers in the freezer for other meals; they no longer go to waste! For tonight's meal, I will bake off a couple of potatoes to put the chili on top of. I'll also steam some broccoli to throw in, and we'll have the rest of the salad leftover from Monday. Delicious!

Friday: It's girl's night, so I won't be cooking for David and I. I know there will be a spread of healthy dips, appetizers, and snacks since we are all bringing something and all of us are striving to be health-conscious. I am making yummy spinach-feta dip, chunky guacamole, and trying a new recipe - zucchini parmesan crisps. This is going to be fun - I am so excited!!


Saturday: We have a "holiday" party (WTF??) for Dave's company this evening, so I probably won't be cooking tonight. So for a good lunch before the day's festivities, I'll cube up the chile-rubbed pork that I baked on Monday. I also have some low sodium pinto beans already cook up, so I'll add some baked tortilla chips, 2% shredded cheese, and a little light sour cream.... VOILA! Pork nachos! :)

I was blessed with a mama that loved to cook, and so was David! We learned so much from our mama's! It also helps that we both have an obsession with the Food Network and we both love to experiment in the kitchen! Cooking together is such an awesome way to spend time together... we love our nights in the kitchen!
