Sweet and Spicy Pineapple Pork

Sweet and Spicy Pineapple Pork

This recipe for porkchops was delicious. We have a similar one we use where each porkchop is in its own foil pack w/ teriyaki, pineapple, onion, pepper, etc and placed on the grill. This was a little different simply because the pan sauce was made separately from the chops! Still soooo yummy... plus that meant I could make the sauce while hubby manned the grill... double-duty in the kitchen means we eat a little bit sooner!

Here is the original Rachel Ray recipe:
As usual, I made a few modifications based on what I already had in my kitchen. Those changes are in blue italics.
You will need:

-3 Tablespoons extra-virgin olive oil
-Four 1 1/2-inch-thick boneless center-cut pork chops
-1 large red onion, chopped (I used a large shallot I had leftover)  
-2 garlic cloves, chopped
-1 red bell pepper, cored, seeded, and shopped
-1 jalapeno pepper, seeds removed, finely chopped
-One 8-ounce can of pineapple chunks, in juice
-1/2 cup chicken stock or broth
-1/4 cup fresh flat-leaf parsley (I didn't have this, so I used a little chopped green onion. YUM!)

Rachel's recipe tells you to preheat the oven to 375. Heat a large skillet with 2 tablespoons on the EVOO, and sear the salt and peppered chops for a couple minutes on each side, then finish them in the oven for about 8-10 minutes. Let them rest while you make the sauce.

I put salt and pepper on the chops along with a little Montreal seasoning, then gave them to the hubby to put directly on the grill. I only used my skillet for the sauce.

For the sauce, put the skillet on medium-high heat and add 1 Tablespoon of olive oil. Add the onions(shallots, in my case), garlic, bell peppers, jalapenos, salt, and pepper - cook for 3-4 minutes until the veggies start to wilt. Add the chunked pineapple (with its juice) and the chicken stock. Cook the sauce for another 3-4 minutes. Add the parsley (green onions, for me) and stir to combine, then pour the sauce over the chops.

Rachel Ray's recipe suggested serving this with white rice or sweet rolls, but we did neither. 

We wrapped some sweet potatoes in foil (that D first scrubbed clean, covered in olive oil, then added kosher salt to the skin) and threw them on the grill first thing. We finished those off with a small sprinkling of brown sugar and a little bit of cinnamon. They absolutely melted in our mouths... it was like candy!!




After chopping a jalapeno for the sauce, we still had a couple jalapenos left that needed to be used. We also had some half-slices of low-sodium bacon leftover from breakfast on Saturday. I grabbed some neufchatel (melts better than regular cream cheese and has 33% less fat) cheese, stuffed the jalapeno, then wrapped it in a half slice of bacon.


Those went in a cast-iron skillet, then on the grill with the chops and sweet potatoes!

We enjoyed our dinner while watching the Mavs play! We had also spent some time at the pool that day, so D fell asleep during the 3rd quarter of the game. I tried and tried and tried to wake him up all during the 4th quarter; I knew he wouldn't want to miss seeing them win the championship! There was NO waking him, unfortunately, but at least I got to watch the Mavs win it all in Game 6!! Go Dallas!!!!

Feelin' the Burn...

...and I'm loving it!!

D and I have always tried to be "health-minded", but working out is something we have both really struggled with. I cook several nights a week, and I am always looking for ways to "lighten up" recipes to make sure our food is healthy. I am also doing pretty darn good using natural, fresh ingredients. We don't do the whole frozen pizza thing anymore, and I have to say, it's pretty awesome. 

D broke down and joined a gym right across the street from his work so he can go and workout on his lunch breaks. Well, gee, I can't let him show me up. ;)

<-- I decided to start here. Now that I am out of work for the summer, I figured I should be able to motivate myself enough to commit to 20 minutes, at least 3 times a week.

First of all, this DVD is a butt-kicking! You should really expect that since Jillian's hot bod is plastered on the front.

Yes, it's only 20 minutes, but you had better be prepared to work your tush off (isn't that the point?) for the entire 20 minutes. Haha, it's no joke, people!!


Point is, I have only done this twice. Once was with my sister. 


I am finding that I don't quite have the motivation to workout when I am alone. I can just turn the video off, or stand there and watch Jillian do all the work. ;)

Well, obviously that's not doing me any good!

Since I am a card-holding American Indian (yes, that's super cool), I can take advantage of their facilities for f.r.e.e.

(BTW, since I'm sure you are all dying to know... I'm part of the Potawatomi tribe)

What does this facility offer? Workouts with a personal trainer. 

OH YES! Someone to help motivate me, encourage me, and keep me from hopping off the Elliptical before the set program is over. 

This was my first week going, and I am in looooooove!!! This guy totally whoops our butts, and the next day (sometimes that same afternoon) I can hardly move, but I LOVE it! I find myself excited to go back and even catch myself checking the clock all morning to see if it's almost time to go train!!!

Even cooler - both my sisters, my mom, my aunt, and my cousin have been going as well. Our family is a real HOOT, so we all encourage each other and make each other laugh the whole way through it. 

It's giving me more energy, and also giving me the motivation to get my butt moving even on days that I don't meet with the trainer. In addition to 3 days with the trainer, I have done the Jillian video once, and also did some time on the elliptical (which TOTALLY worked out some of my soreness!!).  

If I wasn't such a wuss, I would post my weight and measurements here so you all could help me track my progress... but, uh, I don't know if I am quite ready for that!!! Maybe at the end of the summer I will share my starting and ending points so you can see the difference.

Either way, I am PSYCHED about this opportunity and I am loving every minute of these sore, sore muscles. Healthy me is on the way!!!! :) I will keep ya posted on my progress!

Weekend Wrap-Up

Yes, this is a weekend wrap-up on a Tuesday. :) But that's because Monday was a busy one and I barely got all my photos uploaded yesterday. So Tuesday it is. :)

Friday night we spent out in Mesquite. It was a very special occasion! 


Not only did my little brother celebrate his 21st birthday, we also celebrated his recent accomplishment: he is officially a minister! He still has 2 years of school left before he will be "ordained", but he is working HARD and I am so proud of him!

Golly, he's SO much taller than me!!

Saturday we spent the day at my twin's new house! It's soooo lovely, and I am pumped that her little family finally has some room to grow! Jackson is crawling all over the place, and Andrew already has friends in the neighborhood! It's such a perfect house for them! This video of little Meatball rocking out on the Jumperoo absolutely makes my day!! He went at it for a solid 20 minutes and STILL didn't want to nap after, even though I am sure he was exhausted!



Sis and I started the day by doing Jillian's 30-day Shred video. We made it through, but oh it was a beating! After only a couple of hours, I could already feel the soreness setting in - I knew I was going to be hurting on Sunday!!

Mom and I spent the day at Sis' waiting for the cable guy (who never came) while Sis had a jewelry party to get to (she is doing SO WELL selling Park Lane!!). Her boys are amazing, though, so mom and I certainly didn't mind hanging out with them all day!



My honey and I had planned on having a quick dinner with Sis and BIL then heading back home, but that just didn't happen! We were having such a blast with my family, we ended up staying and crashing on their couch for the night! 

Sunday, when we finally made it back to our side of town, still needed to be a productive day. I had dreaded laundry to do, and we needed to go grocery shopping for the week. So we did it. Blah. We ended our evening with leftover Messy Giuseppes, Chimay Blue, and the Mavs! 

I didn't burn the edges of the bread this time! ;)


I didn't even mind so much that the Mavs lost! It was a close game the whole time, and we've had our fair share of squeaking by with the win this post-season. Looking forward to watching them tonight!

Fun and Games!


Alex J. Cavanaugh is hosting a blogfest today that's all about our favorite games!! With summertime upon us, playtime is here! Whether it be board games, card games, or video games - games are a great way to spend quality time with the people I love most! 

Isn't it funny how everything is about the technology now? We go to my parent's house and "family time" is all playing golf together on the Wii. We really do have a blast and enjoy each other's company, but I thought for today I would focus on some classic favorites... ones that don't require being plugged in! ;)

I am sure there are several of you who have never even heard of this game, but it's tons of fun! It's a "car game", for lack of a better phrase. You go on a trip and as you draw cards, you have to play a "roll" card to go, and play your mileage to get to the end of the road. Other players can throw speed limits on you, give you a flat tire, etc to keep you from getting to the end of your trip first.

This game means so much to me because I always played it with my nana and papa. I can hear my nana singing in the background, "Rollin', rollin', rollin'. Keep them doggies rollin" every time she played a "roll" card. I might need to get into her attic and see if we can track this one down -  I need to introduce hubby to the awesomeness that is Mill Bornes!

This one is familiar to just about everyone, no? Although now they have the SpongeBob version and several others, the original was always a favorite of mine and my twin's. She was much better at getting the funny bone out than I was. 

I love that this is a classic game I can still play with my nephews. It may not have tons of little gadgets, bells, and whistles... but it's still good, clean fun!

Here's a more current favorite for ya. Hubby and I love playing dominoes. This is another game we go to my parents and play with them (or my sister and brother-in-law). It's a standard party game when we have people over for grilling during the summer. Its concept is easy enough if you can count by fives ;), and we also like playing "teams". 

All of this game talk has put me in the mood for a little competition! Guess I will have to bring out the dominoes this evening and talk my man into playing a few rounds with me! Happy Monday, all!!

Good Grub on the Road

Road trips! 

My honey and I hadn't been on one in awhile, and our road trips are usually just the 2 of us traveling 4-6 hours to Austin or San Antonio. So, gearing up for a 24-26 hour trip in the car (with family) to California was a whole other monster!

For our 1-year wedding anniversary a couple of years back, we did a "Diners, Drive-ins, and Dives" and "Man vs Food" road trip. We traveled to San Antonio, and hit up as many restaurants featured on those shows as we could on the way. It was a REAL blast, and we got to try some TASTY food!

The idea was mentioned that we do the same for our trip to Cali, but it was definitely a last-minute trip, so we couldn't really plan it out like we did for San Antonio. But luckily, smartphones are little hand-held computers, so we were able to swing a few awesome places on the road!!

We stopped for a sit-down lunch and dinner while on the road. It got us out of the car twice for each long trip (other than gas and potty stops), and it was SO necessary!


On the way down, we stopped for lunch in New Mexico at a place called Joseph's. I was the only one to order Mexican food at lunch, but I was just SO excited to be eating green chile that I was gearing up to eat Mexican food for just about EVERY meal while we were out there! Big D, my honey, and his older sister all got the Green Chile Burger, and lil sis ordered pancakes. I got a green chile chicken enchilada and a chile relleno with green sauce. Yum....why did I get NO pictures of our food?

 It was... good. We just had so much better food on our other stops that this was left a little lacking. BUT they did have a neat little gift shop attached and we got some fun pictures behind this Route 66 sign, so it was still a successful stop. :)


When the time came to choose somewhere for dinner, I hit up the DDD website on my phone. We had decided to stop in Flagstaff, Arizona, and I was sure I'd find a Guy Fieri joint we could try. Oh, we hit the jackpot here! 


We ended up at this place right off the freeway called Salsa Brava. The online menu boasted that they used all natural ingredients, no lard, and only serve antibiotic-free and hormone-free meat. Cool, cool. Little sis kept teasing, though, that it can't claim to serve "mexican food" if they don't use lard. ;) We decided to test that theory!


W.O.W. First, let's talk about the salsa bar. Pineapple habanero, Green tomatillo, Fire-roasted Chiptle... the list goes on and on! These three were my favorites, though! 


D ordered a pork taco salad, and I kept eating off of his plate!!! My quesadillas were good, don't get me wrong, but that pork taco salad with the pineapple habanero salsa was to. die. for. 
They even had the best-tasting sarsaparilla for lil sis. 


We also tried a Mexican Chocolate Mousse for dessert... small and decadent, yet shareable and completely yummy! 

We liked Salsa Brava so much we stopped back by there a week later for lunch on our drive home. This time, I got my own pork taco salad. :)

While in California, D's family wanted have breakfast at El Tepeyac Cafe in honor of Gramps... it was one of his favorites! 


We pull up and the sign on the front boasts, "As Seen on Man vs. Food!" Awesome... we scored another MVF restaurant without even trying! They have some HUGE burritos, including the "Manual Challenge", the one featured on the show! Manuel is the owner, and this guy is old! Yet he was still dancing around in the front, seating everyone and taking pictures with customers! Here is D's sisters and dad, posing like his Gramps did when he ate hot food... one hand on the hip! ;)



The last stop we made for dinner on the way back was, by far, the BEST meal we had on the road. We didn't get this tip from Food Network or the Travel Channel, this was just a little place that D's family has always eaten at when making this trip.

Ohmygosh, this food was fantastic! I had a bean, egg, and cheese burrito with green chile and D got chicken blue corn layered enchiladas with red chile... we shared both. We pretty much inhaled this food before I even had the thought of taking a picture, it was that good!! We rounded the meal off by all sharing a couple of sopapillas, then we were right back on the road!!

Roadside food is probably one of the best things about a good road trip! It was such a blast trying all these new places... I miss the green chile! All you people in New Mexico, Arizona, and California... don't take for granted that yummy green chile sauce... I WISH it was a staple here in Texas!!!!! I miss it so much already... please excuse me while I wipe the drool off my chin...

Messy Giuseppes

Messy Giuseppes... also known as "Italian Sloppy Joes"

Rachel Ray is so clever!! The name of this recipe cracks me up! Plus, she has some TASTY recipes!!

I was really excited about this recipe when I added it to my May menu. Life's circumstances changed our plans, however, and we ended up in California the week I had planned to make this. No fear, I rescheduled it for June 1st and I am so glad I did!

You will need:


-Enough extra virgin olive oil to just coat the bottom of a skillet
-1/2 tsp red pepper flakes
-1 pound lean ground sirloin
-1 green bell pepper, seeded and chopped (I had a few small orange and yellow ones, so I used those instead)
-1 small onion, chopped
-5 large garlic cloves, chopped (I used pre-minced in a jar; I LOVE that it prevents "garlic fingers")
-1/4 tsp nutmeg (eyeball it)
-salt and pepper
-1 medium portobello mushroom cap, finely chopped
-1/2 cup red wine, a couple of glugs (I used a merlot)
-3/4 cup beef stock
-14-ounces of crushed tomatoes
-about 4 tablespoons of super-soft butter
-1 cup (about 10 leaves) of fresh, chopped basil
-Individual ciabatta or hoagie rolls (I used whole wheat hoagies)
-1/2 cup grated Parmigiano-Reggiano or Pecorino Romano
-1 ball of fresh mozzarella cheese, cut into 8 slices

1. Preheat the broiler to high

2. To make the meat sauce, heat a deep skillet over medium-high heat. Add the olive oil, red pepper flakes, and ground sirloin, breaking up the meat as it browns. Add the bell pepper, onions, 3/4 of the garlic, nutmeg, and a little salt and pepper. Continue to break the meat into smaller bits as everything cooks together. Add the mushrooms and cook about 5 minutes more.


Add the wine and cook for another minute, then add the beef stock and tomatoes. Bring the mixture to a boil, then reduce the heat to medium-low. Gently simmer for 10 minutes.


3. While the meat is simmering, combine the remaining garlic with the soft butter, chopped basil, and a little salt and pepper. Split the rolls in half lengthwise without separating the halves. Press open the rolls, flattening them out a bit. Slather the insides with the garlic butter and toast under the broiler until golden brown.


4. Top one side of the garlicky, toasted rolls with a heap of meat, sprinkle each pile of meat sauce with the grated cheese, and top that with 2 slices of the fresh mozzarella.
 


Put them other the broiler to melt the cheese. Remove them from the broiler and prepare to get sloppy with the Messy Giuseppe!

Guys, this was delicious. The basil garlic butter absolutely MAKES these sandwiches! RR's recipe actually called for 6 Tablespoons of butter, but I just couldn't bring myself to use that much. I probably used less than 4, but you really just need enough to bring the basil, garlic, salt and pepper together. 

Also, she claims the recipe feeds 4 people, but I think there is enough filling to easily make 6 sandwiches. 

The fresh mozzarella melted under the broiler makes everything so creamy and, well, YUMM-O! ;) 

The sandwich is a meal all on it's own, but you could also bake off some sweet potato fries to go along with it!

Don't be fooled by the burnt edges of my first sandwich! The broiler can be a tricky little sucker if you don't keep a close eye on it! Luckily, it was just the edges of the bun and it didn't change the yumminess a bit. :)
